passionate about using as many Northern Irish ingredients as possible, such as Broighter Gold Rapeseed Oil from the Kane's in Limavady; home-grown "Portrush" garlic; Ballyrashane Creamery in Coleraine's parmesan-style cheese and my home grown herbs when in season!
